If you do not own a tagine dish, you can certainly make this in a deep skillet or a crockpot and then serve it in a bowl. It retains heat nicely and will slow cook the flavors so you can really get the essence of the stew.

Live Virtual Cooking Class for Chicken Tagine With Olives and Preserved Lemons

Cooking time is for cooking in a clay or ceramic tagine.

The slow cooking process infuses the meat or vegetables with rich incredible flavors that burst out as soon as you take a bite. According to my Moroccan friend, the spices vary from region to region, mostly due to local taste and customs.

If you want to join us, prepare:

  • 1 to 2 preserved lemons, quartered and seeds removed
  • 1 whole chicken, cut into pieces, skin removed, back discarded, or reserved for another use
  • 2 large onions, finely chopped (white or yellow)
  • 2 to 3 cloves garlic, minced
  • 1 small handful of fresh cilantro, chopped
  • 1 small handful of fresh parsley, chopped
  • 2 teaspoons powdered ginger
  • 1 teaspoon black pepper
  • 1 teaspoon turmeric (or 1/4 teaspoon Moroccan yellow colorant)
  • 1/2 teaspoon salt, or to taste
  • Optional: 1/4 teaspoon saffron threads, crumbled
  • Optional: 1 teaspoon smen
  • Optional: 1/4 to 1/2 teaspoon ras el hanout
  • 1/3 cup olive oil
  • 2 handfuls pitted olives (green or red, or mixed)
  • 1/4 cup water (approximately, if using a tagine)

To make this recipe vegetarian or vegan, simply omit the chicken and replace it with your favorite protein. I’d recommend sweet potatoes. Sweet potatoes will nicely balance out all of the savory stew flavors. If you decide to use sweet potatoes, you might reduce the number of regular potatoes I use in the recipe so it’s not too starchy.
